Taco Bake
1lb ground beef
1 can rotel, drained
1 cup sour cream
1/2 cup water
packet of taco seasoning
bag of fritos
bag of cheese, I used monteray jack but cheddar would be better.
brown beef and drain. Add rotel, sour cream, water and taco seasoning. Cook until reduced a bit. preheat oven to 350. In a 9x13 dish, put a layer of fritos in the bottom of the pan. Put a layer of the meat mixture on top and layer with some cheese. Repeat making sure that cheese is the top layer. Bake for 20 mins or so until bubbly.
** this was pretty good but I think it needs some work. I think I would add more taco seasoning, maybe a can of corn. Not sure but it needs some work. It was pretty good but needs something. I'll play with this one and let you know.

Chicken Taco Soup (Jennifers recipe, I modified it)
2 10oz cans of canned chicken
1 can of fiesta corn, drained
1 can black beans, drained and rinsed
1 can cream of mushroom soup
3 cans of water
1 can of sliced mushrooms, drained
1 can petite diced tomatoes
1 can diced green chilis
1 can diced potatoes
1 package ranch dressing mix
1 package taco seasoning mix
chopped fresh cilantro
Dump it all in the crock pot and put on high for 3 or 4 hours...or until hot. Just before serving stir in the cilantro.
Serve with fritos, cheese and sour cream!

Made this today and it turned out pretty good.... A Version of chicken and dumplings.
4 chicken breast - seasoned with black pepper, garlic salt and a tiny bit of cumin
1/2 small onion - diced
2 cans cream of chicken soup
2 cans chicken broth (could just use water)
2 tbsp butter
Throw all this in a crockpot and turn on high for 4 to 5 hours. About 30 minutes before done, open a can of biscuits and tear into bite size pieces, thrown in crockpot.
I'm not a fan of mushy dumplings...so I just baked the biscuits in the oven and served them over the chicken.

Easy Breakfast Casserole
One roll of reduced fat crescent rolls
8oz ham, chopped (I used a package of already chopped ham)
6 eggs
1/2 cup milk
1 cup reduced fat Cheddar cheese
1 cup reduced fat mozzarella or monterey jack
pepper to taste
Heat oven to 350 degrees
roll one can of crescent rolls into a 9x13 pan, pressing to fill the pan and seal the seams
sprinkle ham on top
Beat eggs, milk and pepper until well blended, pour on top
Sprinkle cheese over the top
Bake for 20-25 minutes or until brown
**** I had to bake this for almost 35 minutes to get it set in the middle****
Super easy and yummy!!

Spinach dip
16 oz bag frozen spinach, thawed and all the water squished out
1 jar of roasted garlic alfredo sauce
1 jar sliced mushrooms
1/2 cup or so of grated parmesean cheese
Mix it all together and put it in a small crock pot. Heat until warm....enjoy!
You could also put this in a glass bowl and cook it in the microwave until warm I suppose. Haven't tried that yet....

2 cups frozen berries (blueberries, peaches, raspberries) whatever you like
1/2 cup sugar
1 cup sugar
1 cup flour
1 tsp baking powder
3/4 cup milk
1 stick of butter, melted
Mix berries and sugar in bowl. In separate bowl mix all the other other ingredients. Heat over to 350 and spray a 9x13 baking dish with pam.
Pour batter mix into dish and top with berries. Do not mix, just spread them around. Cook for 40 minutes or until the top is golden brown!
This was so yummy! I did have to cook mine longer but I only used an 8x11.5 pan so that might of been it.

Shrimp Fra Diavolo
This is a spicy, quick shrimp and pasta dish. You can adjust the amount of red pepper flakes to suit you.
1lb shrimp - I use the already cooked stuff but if you are using the raw, make sure to peel, devein and remove the tails. You will want to cook it before hand too in a little bit of olive oil.
1tsp or so of salt
1 tsp of crushed red pepper flakes
3 tbsp of olive oil
1 medium onion, chopped
1 (14.5) oz can petite diced tomatoes
1 cup dry white wine (I usually use chicken broth instead)
3 garlic cloves, chopped (I use the stuff in a jar)
1/4 tsp dried oregano leaves
spaghetti noodles
Toss the cooked shrimp with the salt and red pepper flakes, set aside. Get a big pot of water on to boil...add pasta. Heat oil and saute onion until soft, add tomato, chicken broth, garlic and oregano. Let simmer for about 10 minutes or so until it has reduced a bit. Meanwhile, drain the pasta. Add shrimp back in and stir for a few minutes until shrimp are warm....
Serve with the pasta and crusty garlic bread.
Serves about 4....
