menu for the week of July 11th-17th

Sunday
Monday - Salmon, brown rice and green beans
Tuesday - Pesto and Ricotta Stuffed Chicken Breasts
Wednesday - lasagna rolls
Thursday - Chicken in a biscuit and cantaloupe
Friday - Date Night
Saturday - tacos

Lime Cilantro Rice with Black Beans

I served this along side the lime chicken recipe below.

2 cups cooked rice
1/2 lime - juiced
1/2 cup cilantro - chopped
1 can black beans - drained and rinsed


Mix everything and heat for a few minutes. Enjoy!


I cooked the rice earlier in the day so come dinner time it was cold. I put everything in a skillet and added an entire can of beef broth (it was all I had and would of preferred chicken broth). I let it cook for a few minutes until most of the liquid was absorbed and it was hot again. If you serve this right away, you won't have to do that.

BBQ lime chicken

I made this last night and oh my gosh it was so good!

4 boneless, skinless chicken breasts
1 tsp seasoning salt
1 tsp ground black pepper
1/4 tsp cayenne pepper
1/4 tsp chili powder
1/4 tsp cumin
1/2 cup lime juice
1/4 cut olive oil
4 cloves garlic, minced (I use the jar stuff)
1/4 cup chopped fresh cilantro

Pierce chicken all over with a fork. In a ziplock add all ingredients except chicken. Mix it well, then add chicken and put in fridge for at least 2 hours.

Grill and enjoy! It was so simple but it was so tender and yummy

Weekly Menu

Monday - salmon, brown rice and pineapple salsa
Tuesday - chicken enchiladas
Wednesday - spaghetti carbonara with bacon and peas
Thursday - baked chicken
Friday - homemade pizza's

"real food"

Last week I watched an Oprah episode about "real food". I got really interested in what she was talking about and started doing some research. Heading into my kitchen, I found myself checking out all the food ingredient lists in the fridge and pantry. What I found, alarmed me! All the strange additives, chemicals and fillers was scary! What happened to our food? Nothing is real anymore. Most of everything I was putting into my mouth and my families mouth's, was what I've begun calling "fake food". I set out on a mission. To find real food and feed my family the best I can.

My adventure started with a trip to the Whole Foods market in town. I fell in love with this place. No preservatives, no fillers, grass fed beef, antibiotic and free range chicken. It was amazing the difference in taste things have. You can actually buy food that tastes like it's supposed to. Why would a can of tomatoes need anything added to it? That was my question and still haven't found that answer but I'm going to keep looking. Most of the things I post will be Gluten Free as well. I'm embarking on a new way of eating....stay tuned!

This blog will be where I will be posting my menus and recipes that I come up with. All my "real food" finds ect.

Crock Pot Fajitas

2.5 lbs round steak cut into strips
4 bell peppers, cut into strips ( I used 2 green and 2 red)
2 onions cut in half and sliced
2 packets of lawreys fajita seasoning
1 can rotel
1/2 cup beer ( I used budweiser)

Put everything into a crockpot, stir and cook on low for 8-10 hours.

Serve with tortillas, cheese, sour cream, salsa
